Pasta with Charred Lemon, Broccoli, and Spring Onions

 
 

Ingredients

 
  • 1 lemon sliced in half 

  • 1 cup of broccoli broken into small pieces 

  • 1 serving of pasta (fettuccine recommended) 

  • 1 tablespoon of butter

  • 1 tablespoon of olive oil 

  • Salt & Pepper 

  • 1 bunch of spring onions 

  • A few leaves of kale broken into pieces 


Instructions

  1. Bring 1 pot of salted water to a boil and heat a large pan on the stove over medium heat 

  2. Add 1 tablespoon of butter to a hot pan. Thinly slice ½ of the lemon into rounds and add to a pan. Add broccoli and cook until sides begin to brown. Once both sides of the lemon rounds are charred, remove from the pan and place on a plate. 

  3. Continue to cook broccoli. Thinly slice the bottoms of the spring onions and add to the pan. Allow them to char. 

  4. Add pasta to boiling water and cook until al dente. Reserve 1 cup of pasta water.

  5. Add pasta to the pan with broccoli and onions along with 1 tablespoon of olive oil and a splash of pasta water (add more as needed), and the juice from the other half of the lemon.

  6. Add kale and cook until wilted. Remove from heat and add to a bowl with charred lemon. 

  7. Top with lemon zest and the remaining spring onion thinly sliced.
