BBQ Cauliflower and Collard Green Wraps

 
 

Ingredients

 
  • 1 head of cauliflower 

  • BBQ sauce of choice (Sutter Buttes Tandoori BBQ recommended)

  • 2 carrots 

  • 1 bunch of collard greens 

  • 2 tablespoons of vinegar of choice

  • Salt and pepper 

  • Optional: bread crumbs or Mill Valley Pangrattato

  • 1 tablespoon of chopped parsley


Instructions

  1. Preheat the oven to 425 degrees. Break apart cauliflower into small pieces and coat with a thick layer of BBQ sauce and optional breadcrumbs (Mix with hands to fully incorporate) 

  2. Place cauliflower on a baking tray and bake for 25 to 30 minutes. 

  3. Shred carrots into ribbons and coat in vinegar. Add salt and pepper and allow to sit for 10 minutes. 

  4. When the cauliflower is done, allow it to cool for a few minutes before assembling the wraps.

  5. To assemble wraps add cauliflower, carrots, and parsley on top of a collard green leaf. Roll tightly. Repeat the process until you have created the desired amount of wraps.
