Breakfast Salad with Crispy Purple Potatoes

 
 

Ingredients

 
  • 1 lb of Purple Potatoes 

  • 1 egg 

  • 2 slices of bacon (Ham Stand is Recommended) 

  • The juice of 1 satsuma mandarin

  • The juice of 1 lemon

  • 2 cups of salad mix 

  • 2 tablespoons of olive oil 

  • ½ tablespoon of balsamic vinegar 

  • 2 cloves of garlic 

  • Salt and pepper to taste


Instructions

  1. Chop potatoes into small cubes and coat in a mixture of 1 tablespoon of olive oil, salt, pepper, and minced garlic. Place on a baking sheet and bake at 450 degrees until crispy (20-30 minutes) 

  2. While the potatoes are baking, cook 2 pieces of bacon and chop them into small pieces. 

  3. To make the dressing combine the juice of one Satsuma Mandarin and 1 lemon with 1 tablespoon of olive oil, ½ tablespoon of balsamic vinegar, and salt and pepper. Stir or shake and coat salad mix 

  4. Cook an egg to your preference (over easy is recommended) and top the salad with crispy potatoes, bacon, and egg. 

  5. Enjoy with coffee and toast for a delicious savory breakfast!
