Leek, Onion, and Broccoli Quiche

 
 

Ingredients

 

Ingredients for the Crust:

  • 3 cups of flour

  • ½ cup of ice water 

  • ½ cup of olive oil 

  • 2 teaspoons of sale

Ingredients for the filling: 

  • ½ lb of broccoli 

  • 1 leek 

  • 1.5 cups of cheese of choice 

  • 4 eggs 

  • ½ cup of milk 

  • 1 red onion 

  • 1 tablespoon of olive oil 

  • Salt & pepper


Instructions

  1. Preheat the oven to 400 degrees.

  2. To make the crust, add flour and salt to a bowl and mix. In a separate bowl combine olive oil and ice water and whisk. Pour oil/water into dry ingredients and whisk until a crumbly dough is formed. 

  3. Line a 9-inch round baking pan with parchment paper. Press dough into the pan creating the crust. Poke holes with a fork into the bottom of the dough. 

  4. Heat a frying pan on the stove and add 1 tablespoon of olive oil. Finely slice the red onion and add to the pan continuously stirring. Thinly slice leek into rounds and add to the pan. When onions and leeks begin to soften add broccoli crowns. Season with salt and pepper. 

  5. In a bowl whisk 4 eggs and ½ a cup of milk. Pour broccoli, leeks, and onion mixture into the bowl and mix thoroughly. Pour into the baking pan. 

  6. Place in the oven and bake for 30 minutes or until eggs are cooked through, the top is golden brown, and a fork comes out clean when inserted.

  7. Enjoy hot or cold!
