Pizza with Rainbow Chard, Apricots, Garlic Scapes and Prosciutto

 
 

Ingredients

 
  • Pizza dough (Liberty is recommended) 

  • 1 tablespoon of Olive Oil 

  • 2-3 garlic scapes finely minced 

  • 1 bunch of Rainbow Chard 

  • 2-3 Apricots

  • 2-3 slices of Prosciutto 

  • Low Moisture Mozzarella

  • Aged balsamic vinegar (Calolea is recommended) 

  • salt/pepper 


InstructionsPreheat oven to 500 degrees 

  • Roll out pizza dough until thin and place on a large baking sheet. To keep the dough from sticking, sprinkle cornmeal on the underside of the dough.

  • Drizzle olive oil on the dough and add finely chopped garlic scapes. 

  • Roughly tear chard leaves and layer on top. 

  • Thinly slice the apricot and layer on top of the chard. 

  • Add mozzarella cheese to your desired amount and top with salt and pepper 

  • Bake for 20-25 minutes or until the crust is golden and the cheese is bubbly. 

  • Allow to cool slightly and top with prosciutto and balsamic vinegar
