Kohlrabi Fritters with Sauteed Shiitake Mushrooms & Tomato

 
 

Ingredients

 
  • 1 bulb of kohlrabi peeled 

  • 1-2 tomatoes roughly chopped

  • ¼ lb. of shiitake mushrooms diced 

  • 1 tablespoon of butter 

  • ¼ - ⅓ cup of oil for frying

  • 1 large egg

  • 2 tablespoons of flour 

  • salt/pepper 

  • Allium of choice (garlic scapes or garlic recommended) 

  • A few basil leaves, finely chopped.


Instructions

  • Shred kohlrabi by hand or in a food processor and wring out excess moisture using a kitchen towel. 

  • Beat an egg thoroughly in a bowl and add kohlrabi, flour and salt. Combine well

  • In a large frying pan, heat oil on medium high. Add flattened disks of kohlrabi batter into the pan flipping when each side is golden brown. Set aside and repeat the process. 

  • In a separate frying pan, heat butter and garlic on medium heat. Add chopped tomatoes, mushrooms, salt/pepper and stir frequently until mushrooms are cooked. 

  • Place fritters on a plate and top with tomato/mushroom mixture. Garnish with basil leaves. This meal can be served for breakfast, lunch, dinner, or as an appetizer!
