Watermelon Radish Salad

 
 

Ingredients

 
  • 1 large or 2 small watermelon radishes 

  • 2 Satsuma Mandarins

  • 1 shallot 

  • 2 Golden Kiwis

  • The juice of 1 lemon 

  • 1 tablespoon of olive oil  

  • Flaky salt


Instructions

  1. Peel Satsuma Mandarins and Golden kiwis and slice into ¼ inch thick rounds. 

  2. Using a sharp knife or a mandolin, thinly slice rounds of watermelon radish. 

  3. Peel and slice shallot into thin pieces 

  4. Layer kiwis, Watermelon Radish slices, Satsuma Mandarin slices on a plate. Top with thinly sliced shallot. 

  5. Drizzle with olive oil and lemon juice and top with flaky salt.
