Turmeric-spiced Oatmeal with Cardamom, Pears, and Persimmons

 
 

Ingredients

 
  • 1 cup of old fashioned oats 

  • 1 teaspoon of turmeric powder 

  • 1 teaspoon of cardamom 

  • ½ tablespoon of brown sugar 

  • 1 teaspoon of cinnamon

  • ½ teaspoon of nutmeg 

  • 1 pear finely chopped 

  • 2 persimmons chopped 

  • 1 teaspoon of vanilla extract

  • 1 pinch of sea salt


Instructions

  1. Add 1 and ¼ cups of water to a saucepan on the stove on medium heat and 1 cup of oats. Bring water to a boil and then reduce to a simmer to allow oats to cook. 

  2. In a separate saucepan add chopped pear, persimmons, brown sugar, cardamom, cinnamon, and nutmeg and turn to high heat. Allow fruit to cook down to a jammy consistency. 

  3. Add the turmeric, vanilla and sea salt to the oatmeal and stir. 

  4. Once oatmeal is fully cooked, and the fruit is the consistency of jam, add oatmeal to a bowl and top with persimmon/pear mixture. Enjoy hot with any other toppings of choice!
