Satsuma Mandarin & Meyer Lemon Olive Oil Cake

 
 

Ingredients

(modified from a recipe from sipandfeast.com)

 
  • 1 ⅓ cup of Calolea Meyer Lemon Olive Oil 

  • 3 eggs 

  • 1 ¼ cup of milk of choice 

  • 3 tablespoons of grated mandarin or lemon zest

  • ¼ cup of fresh squeezed Mandarin Juice 

  • ¼ cup of orange liqueur

  • 1 ¾ cup of granulated sugar

  • 2 cups of flower 

  • 1 pinch of salt 

  • ½ teaspoon of baking powder 

  • ½ teaspoon of baking soda 

  • Powdered sugar for dusting 

  • 1 teaspoon of vanilla extract


Instructions

  1. Preheat the oven to 350 degrees, grease a 9 inch cake pan and line with parchment. 

  2. In a large mixing bowl add olive oil and eggs and whisk 

  3. Add milk, Satsuma Mandarin zest and juice, orange liqueur and mix 

  4. Add sugar and mix to incorporate

  5. Add dry ingredients (flour, salt, baking powder, baking soda) and whisk until it is mixed. 

  6. Pour batter into the prepared pan and bake for 50-55 minutes or until a toothpick inserted comes out clean. 

  7. Allow the cake to cool, top with powdered sugar and sliced mandarins.
