Purple Potato Flatbread

 
 

Ingredients

 
  • Purple Potatoes (3-4 thinly sliced)

  • Pizza dough of choice (Liberty frozen is recommended) 

  • Goat Cheese (Laura Chenel Chevre recommended) 

  • ½ cup of parsley chopped

  • 1-2 cloves of garlic 

  • ½ cup of olive oil 

  • Juice of 1 lemon 

  • Salt & Pepper 

  • Optional: Bacon


Instructions

  1. Preheat oven to 500 degrees

  2. Thinly slice purple potatoes into rounds and put in a cold water bath with salt for up to an hour.

  3. Line a 9 by 12 baking tray with parchment paper and grease with olive oil. Roll out pizza dough and bake for 5-10 minutes. 

  4. Partially cook bacon in either the oven or on the stove

  5. In a blender or food processor add chopped parsley, garlic, lemon juice, salt/pepper and up to a half-cup of olive oil. Blend until smooth

  6. Remove pizza crust and add dollops of goat cheese, sliced bacon, and thinly sliced potatoes to the dough. 

  7. Cook for 15 minutes or until edges are golden brown, cheese is melted and potatoes are cooked.

  8. Top with parsley pesto and enjoy!
