Ginger and Satsuma Mandarin Glazed Carrots Ingredients

  • 1 lb of Carrots peeled 

  • ¼ lb of ginger peeled

  • 1/2 cup of water

  • 2-3 mandarins peeled 

  • Salt and pepper to taste 

  • ¼ cup of honey


Instructions

  1. Begin by preheating oven to 350 degrees 

  2. Line a baking sheet with parchment paper 

  3. Place peeled ginger, mandarins, water and honey in a blender and blend until thoroughly mixed, adding more water if necessary. 

  4. Strain mixture through cheesecloth and add salt and pepper. 

  5. Optional: marinate carrots in ginger/mandarin mixture for several hours in the fridge. 

  6. If skipping this step, coat carrots in mixture, saving a small amount for later. 

  7. Roast carrots in the oven until soft and drizzle with more mandarin, ginger, honey after removing from the oven. 

  8. Serve as part of a salad or on their own as a side dish.
