Garlic Chive Potato Pancakes with Pomegranate Applesauce

 
 

Ingredients

 
  • 2 lbs of gold potatoes

  • 3 cloves of garlic 

  • 1 bunch of chives 

  • 1 lb of apples 

  • 1 pomegranate

  • 1 cup of flour 

  • 1 egg beaten 

  • Salt and pepper 

  • ½ cup of vegetable oil for frying 

  • ½ cup of sugar 

  • 1 teaspoon of cinnamon


Instructions

  1. Grate potatoes into a bowl. Add minced garlic, salt and pepper, chopped chives, beaten egg and flour. Mix together and form into pancakes adding more flour as needed.

  2. In a pan with hot oil fry pancakes flipping until golden brown on each side. Set aside. 

  3. To make applesauce, peel apples and add to a pot with ¾ cup of water, and sugar.Once apples are soft mash or puree with an immersion blender until desired texture is reached. Add cinnamon. 

  4. Seed pomegranate and add ½ of the seeds and juice into the sauce. 

  5. Serve pancakes with pomegranate applesauce and top with extra pomegranate seeds.
