Asparagus and Leek Galette

 
 

Ingredients

 

Ingredients:

  • Pie dough of choice 

  • 1 bunch of asparagus 

  • 2 leeks 

  • 1 lemon 

  • 1 tablespoon of olive oil

  • Flakey salt 

  • Pepper 

  • Cheese of choice: Sonoma herbs sheep cheese recommended 

  • 1 egg yolk 

  • Optional: sesame seeds


Instructions

  1. Preheat the oven to 400 degrees and line a baking sheet with parchment paper.

  2. Chop asparagus into inch long sections and chop leeks into rounds.

  3. Heat a frying pan over medium heat on the stove and add olive oil. Add Asparagus and leeks and cook until slightly softened. Add the juice of 1 lemon and stir frequently 

  4. Roll out your pie dough on the baking sheet and coat in a thin layer of cheese(s). A layer of sonoma herbs, sheep cheese or goat cheese is recommended. 

  5. Add asparagus and leeks on top of the dough and sprinkle with lemon zest.

  6. Fold over the edges of the dough and brush with egg yolk. Top crust with flakey salt and sesame seeds. 

  7. Bake for 35 to 40 minutes or until golden brown
