Artichoke, Lemon, and Asparagus Pasta

 
 

Ingredients

 

Ingredients:

  • 1-2 artichokes 

  • ½ yellow onion sliced thinly 

  •  1 bunch of asparagus 

  • 1 tablespoon of meyer lemon olive oil

  • juice & zest of 1 lemon

  • Pasta 

  • 2 cloves of garlic 

  • salt/pepper 

  • Parmesan cheese


Instructions

  1. Begin by cooking your artichoke (either steaming or roasting) cut off the artichoke heart into slices and set aside (save the leaves for a delicious snack while cooking) 

  2. Add chopped garlic, asparagus, and onion to a pan on medium heat with meyer lemon olive oil and salt and pepper. Cook until softened and aromatic 

  3. Boil a pot of salted water and add pasta. Cook until al dente 

  4. Add artichokes, pasta and 1 tablespoon of pasta water to the pan

  5. Top with grated parmesan cheese and lemon zest. Add extra olive oil if needed.
