Lebanese Inspired Spicy Potatoes with Cilantro and Lemon

 
 

Ingredients

 
  • 2 lbs of gold potatoes 

  • 1 bunch of cilantro 

  • 1 tablespoon of olive oil 

  • Salt and pepper 

  • 1 teaspoon of cayenne pepper 

  • The juice of 1 lemon 

  • 2 cloves of garlic


Instructions

  1. Preheat the oven to 400 degrees. 

  2. Line a baking sheet with parchment paper 

  3. Mince garlic and slice potatoes into quarters.

  4. Cover in olive oil, salt, pepper, and cayenne pepper. For more spicy potatoes add an additional teaspoon of cayenne. 

  5. Lay potatoes on a baking sheet and bake until crispy, flipping and mixing halfway through. 

  6. In a bowl combine finely chopped cilantro and lemon juice. 

  7. Coat potatoes in lemon juice/cilantro mix and serve hot!
