Blistered Shishito Peppers with Garlic Beet Aioli

 
 

Ingredients

 
  • ¼ cup of homemade or store bought mayonnaise 

  • 3-4 cloves of garlic 

  • 1 small beet 

  • Salt and pepper 

  • 1 tablespoon of olive oil

  • 1 pint of shishito peppers 

  • Cilantro leaves to garnish 

  • Sesame seeds to garnish


Instructions

  1. Preheat the oven to 400 degrees. 

  2. Wash and peel one small beet and wrap it in tinfoil. Place on a baking sheet and bake in the oven for 20-30 minutes or until the beet is soft. 

  3. In a blender or food processor combine mayonnaise, garlic, salt, pepper, and the beet and blend until smooth. 

  1. Heat a frying pan over medium heat and add 1 tablespoon of olive oil. 

  2. Cook shishitos until they begin to blister, flipping so each side is evenly cooked. 

  3. To serve, add aioli to a plate and top with blistered shishito peppers, sesame seeds, and cilantro.
