Fried Jimmy Peppers with Whipped Garlic Basil Ricotta Dip

 
 

Ingredients

 
  • ⅓ - 1/2 cup of ricotta 

  • 1 bunch of basil leaves

  • ½ tablespoon of honey 

  • 2 tablespoons of olive oil

  • 1 teaspoon of salt 

  • 1 bulb of garlic 

  • ¼ lb of Jimmy Peppers


Instructions

  • Preheat the oven to 400 degrees. Peel garlic cloves and coat in olive oil. Wrap in tin foil and bake on a baking tray for 10-15 minutes. Remove from the oven and allow to cool. 

  • Heat a frying pan over medium heat with 1 tablespoon of olive oil. Slice Jimmy Peppers in half lengthwise and place in a pan. Flip continuously until the peppers are soft with some blackened skin. 

  • To make the dip combine ricotta, olive oil, honey, 1 teaspoon of salt, 1 tablespoon of finely chopped basil, and roasted garlic in a blender or food processor. Blend until smooth and light. 

  • Spread dip on a plate and top with pan-fried Jimmy Peppers and basil leaves. Enjoy with crunchy bread or crackers.
