Arugula, Cherry, and Goat Cheese Salad with a Garlic Scape Balsamic Dressing

 
 

Ingredients

 
  • 4-6 ounces cups of arugula 

  • ¼ cup of olive oil 

  • 1 tablespoon of balsamic vinegar 

  • 1 cup of red cherries

  • ¼ cup of walnuts

  • 1-2 tablespoons of goat cheese 

  • 1-2 red radishes 

  • 1 garlic scape finely chopped 

  • 1 teaspoon of honey

  • salt/pepper


Instructions

  1. Thinly slice radish and chop into quarters. Slice cherries and remove pit. Add cherries and radish to a bowl with arugula. 

  2. To make the dressing combine olive oil, balsamic, honey and chopped garlic scapes in a small bowl or jar. Muddle garlic scapes into the dressing and mix thoroughly. Add salt/pepper to taste. 

  3. Add chopped walnuts to a frying pan on medium heat. Allow nuts to toast and remove from the heat. 

  4. Add walnuts and goat cheese to the salad and coat with dressing. Mix thoroughly and enjoy as a side or with protein added for a complete Spring meal!
